Briony's Amazing Liver Cake
1/2lb (250g) Lambs liver (could use chicken, but pig and ox liver are a bit coarse )
1-2 cloves garlic depending on clove size
2 eggs (add any left over whites or yolks from other cooking if you want)
Water
Flour (any kind)
Equipment
Food Processor
Swiss roll tin lined with foil which has been well oiled.
Method
Garlic into food processor and zap until well chopped, add liver and zap until broken down well.
Add eggs and zap for about 1 min
Add flour in small amounts to mix until very stiff then add water. Continue to add flour & water until you achieve a cake mix consistency.
Pour into oiled tin and bake for about half hour at 180 degrees.
Allow to cool a little and then turn onto cooling tray. It can be very difficult to peel off foil if you leave it till it is cold.
When cold cut into small treat size pieces and put into a container or bag and freeze.
When required take out what you need and the pieces thaw in about 10 minutes.
Note: Amount of flour and water is up to you. If you have a small food processor then you will quickly reach the point where you cannot add more flour. (about 3-4 oz) but one agility club recipe suggests 8-12 oz and is quite crumbly which I don't like.
Angela's Sardine Cake
Tin of Sardines in sunflower oil (or tuna fish in sunflower oil)
1 egg
1 clove of garlic - crushed
wholemeal flour (ground cornmeal works too), enough to make a sticky dough.
Mix the ingredients together and microwave until cooked through - 5-10 minutes depending on the quantity in the bowl. (You can mix and cook in the same bowl.)
Allow to cool, slice and freeze.
